GYOKURO HIKARI
“Pearl of Dew”. One of the best Gyokuro teas from the province of Uji. To create this exceptional tea the tenderest buds are selected by hand, something that is very rare in Japan, and then one by one, finely rolled. In this tea one discovers a lively, fresh taste, with an absolute remarkable delicacy and roundness; the result of a refinement and a degree of care that only the Japanese are capable of. A tea to delight any tea lover.
For optimum enjoyment infuse 10 g of tea in 60 ml of water at 50°C for two minutes.

TAMARYOKUCHA IMPERIAL
A remarkable green tea with twisted leaves, rather than folded like the Sencha teas. This intensifies its dark green colour which is a sign of great quality in this type of tea. It is milder than many Japanese green teas, with a silky, subtle liquor and a fragrant infusion.

LONG JING
'Dragon Well'. One of the most renowned China teas. Originating from the Zhejiang province, the plants grow on the upper slopes of the Tieh Mu mountains. The tea can by recognised by the way it is folded into the shape of a tea leaf. It has a delicate fragrance, a slightly sweet flavour and a silky texture. The liquor is velvety and long in the mouth, with a chestnut aroma.

SENCHA ARIAKE
Produced by the province of Kyushu, Sencha Ariake is the mildest of the great Sencha teas. Very invigorating and flowery, it is very pleasing in the morning.

GU ZHANG MAO JIAN
A subtle, high-grown tea, with an aroma of wet earth after a storm that is highly regarded by the Chinese. A tea with some fullness.

BANCHA HOJICHA
Bancha teas can also be grilled. It is a simple operation and Japanese teashops often roast their tea themselves. On grilling the Bancha tea takes on a brown colour and a very pleasing woody aroma. It is excellent with meals, especially with fish. It is a very thirst quenching tea that is low in caffeine, ideal in the evening.
Prepare iced tea: Put 15 to 20 g of green tea leaves into 1 L of room temperature water. Leave it to brew for 30 minutes, drain and place in the fridge to chill.
