Matcha Vanilla Marble Cake

Mesmerising! The green swirls of this matcha and vanilla marble cake are simply stunning — perfect for an afternoon snack or breakfast. A very soft and indulgent cake, ideal for introducing matcha to those who fear its bitterness.

Ingredients

- 5 g matcha of your choice

- 100 g plain flour
- 100 g icing sugar
- 7 g baking powder (1 tsp)
- 70 g butter
- 3 eggs
- 1 tsp vanilla paste (or vanilla extract)

Instructions

    1| Preheat the oven to 180°C (350°F).
    2| Mix together the eggs, flour, baking powder, icing sugar and melted butter until you have a smooth batter. Divide it equally between two bowls.
    3| Into the first bowl, add the sifted matcha and mix well.
    4| Into the second bowl, add the vanilla paste (or vanilla extract) and stir to combine.
    5| Create the marble effect: pour the green and white batters into a loaf tin, alternating between the two.
    6| Bake for 20 minutes at 180°C, until a knife inserted into the centre comes out clean.
