Description
The sunchoke (dwaeji-gamja) arrived in Korea as a Chinese import in the 18th Century, and was used in Korea as a survival crop and comforting herbal tea, prepared hot or cold and known locally for its sweetness and traditional role in everyday wellbeing.
Sunchoke notes, reminiscent of burdock and hazelnut, unfold on a smooth texture, leaving a delightfully sweet impression on the palate.

With a teapot or a tasting set: 5 minutes in water heated to 195°F.
According to the gong fu cha method: infusions during 30-40 seconds.

In a teapot or a carafe: infuse 8 g of leaves per 50 cl of water at room temperature for 50 minutes. Remove the leaves and store in the fridge.
