This tea is made from the Yabukita cultivar. The Fukamushi's typicity is due to the fact that the steaming process for these teas lasts 2 to 3 times longer than other sencha. This results is a bright green liqueur with a very thick texture and intense notes.
A umami-rich tea with a complex aromatic profile whose grassy and buttery notes are followed by iodized aroma.

In order for this tea to develop its full aromatic complexity, multiple infusions should be performed in a Kyusu or a Shiboridashi. It is also possible to make cold brew tea by replacing the water with ice cubes : the infusion is finished when the ice cubes have completely melted, and you will obtain a concentrated, intense liqueur that is rare as jade dew.
