King Prawns flavoured with Paris for Him

Ingredients
- 13 g of
- 30 cl water
- 12 gambas
- 4 tbs olive oil
- 2 carrots
- ½ red cabbage
- 1 orange
- 40 g Fleur de sel
Preparation
1. The King Prawns
- Infuse 8 g of in water for 4 minutes at 90°
- Shell the King Prawns and remove the vein. Heat a tablespoon of olive oil in a frying pan and brown the King Prawns for 1 minute on each side.
- Deglaze with 15 cl of infused and reduce.
- Remove and set aside
2. The salad
- Peel the carrots, wash the cabbage
- Grate both using a grater with large holes
- Set aside
3. The fleur de sel
- Quickly mix the fleur de sel with 5 g of in a mixer
- The mixture should remain sufficiently coarse to retain the crunchiness of the salt
4. The vinaigrette
- Squeeze the juice of one orange
- Whisk with 15 cl of tea and 3 tbsp of olive oil
- Add 2 pinches of fleur de sel flavoured with and mix
- Pour over the salad and toss
5. To serve
- Make a bed of well-seasoned salad and add 3 King Prawns per person
- Season the King Prawns with a few pinches of fleur de sel flavoured with
Serving suggestion
Be sure not to overcook the King Prawns, one minute on each side is enough.
