Waffles with whipped cream and matcha

Matcha is the perfect ingredient for reimagining classic baking recipes. Its emerald green colour, umami taste and slightly herbaceous notes bring vitality and an original touch to your afternoon tea!

Gaufres et chantilly au matcha

Ingredients

  • For the whipped cream
  • 30 cl whipping cream
  • 30 g icing sugar
  • 5 g matcha (1 teaspoon)
  • For the waffles
  • 200 g flour
  • 8 g baking powder (1 ½ teaspoons)
  • 1 pinch of salt
  • 3 eggs
  • 1 plain yoghurt
  • 60 g unsalted butter
  • 15 g matcha (3 teaspoons)
  • 5 tablespoons water

Instructions

1. For the whipped cream

  • Leave the cream aside in the refrigerator for 30 minutes.
  • Sift and mix the icing sugar and the matcha.
  • Whip the very cold whipping cream until stiff. Add the sugar and matcha mix while continuing to mix until the resulting cream is smooth.

2. For the waffles

  • Mix together the flour, baking powder and salt.
  • Add the eggs and the yoghurt, then the melted butter.
  • Sift the matcha to prevent lumps.
  • Dilute the matcha in water until it has the same consistency as crêpe batter.
  • Add the diluted matcha to the mixture. Leave to stand in the refrigerator for 30 minutes.
  • Pour the waffle batter into your waffle maker. Cook following the instructions that came with the appliance.
  • Garnish with matcha whipped cream and seasonal fruit.

Tasting suggestion:

You can also prepare plain whipped cream to be served alongside the matcha whipped cream, and add sugar to taste.
