An extremely rare yellow tea
Its name means ‘golden buds of Mount Huo’, a reference to the delicacy of the harvest and its place of production in the Anhui region; Huo Shan Huang Ya is one of China’s most famous yellow teas.
Its uniqueness lies in its traditional production process known as men huang, or ‘yellow fermentation’. This technique involves the controlled withering of the leaves, which are gently warmed, wrapped in cloth and then kept in a warm, humid environment for several hours. This stage allows for slow oxidation, which reduces the tea’s natural astringency whilst preserving the delicate aroma of this spring tea.
This unique process results in a Grand Cru of great finesse, revealing a pale golden liquor with an oily texture and a gentle, sweet flavour.
On the palate, gentle floral notes, fresh hazelnut, almond and vanilla intertwine with delicate vegetal nuances.
