Description

A unique dark tea

This tea comes from Shizuoka, Japan. The leaves are first processed like a green tea and then mixed with black Koji mold to trigger fermentation. After one week, the leaves are dried.

A rich and indulgent Grand Cru with a well-defined licorice profile. A unique and unclassifiable dark tea.

Suggestion of preparation

Prepare this tea hot:
Using a tasting set or teapot: 4 minutes in 90°C (195°F) water.
Traditional preparation using a kyusu or shiboridashi.

Prepare this tea iced:
Using a teapot or carafe: infuse 8g of leaves in 50cl of room-temperature water for 40 minutes. Remove the leaves and refrigerate.
