Sencha: A very popular green tea in Japan
In Japan, sencha is the most famous type of tea. This tea family's unique nature lies in the way its leaves are shaped. After they are steamed and folded into needles, the leaves reveal vegetal and seafood notes.
Sencha Ariake from Palais des Thés: an essential green tea
Sencha Ariake is the most accessible type of sencha. It is harvested in every June, in Shizuoka Prefecture. This Japanese green tea is an excellent introduction to the diversity sencha has to offer. It's no surprise that this tea is the most popular kind in Japan.
This tea offers strong notes, and can be enjoyed hot or iced at any time of day, although the best time to do so is the morning or early afternoon. This tea is also high in antioxidants!
Sencha Ariake pairs perfectly with grilled fish such as red mullet, sea bream, sea bass or salmon, and goes very well with shellfish such as shrimp, scallops or clams. For those with a sweet tooth, Sencha Ariake pairs perfectly with red berry mousse or sorbet.

- Texture in the mouth: smooth and velvety
- Flavour: slightly acidic
- Aromas: iodine to start, marine (raw fish and seaweed), vegetal (cooked vegetable to start followed by an underlying cut grass note)
Suggestion of preparation
With the tasting set: 2' minutes in water heated to 75°C.
To prepare iced tea:
Steep 20g in 1L of water at room temperature 30min. Remove the tea leaves and refrigerate.
