It is made in Hebizuka, the "hill of snakes". This plot of land is one of the highest in Japan. This tea is made by Mister Nakamura, using Kurasawa and Sayama cultivars. Its leaves are harvested by hand, which is very uncommon in Japan. According to local legends, the garden of Hebizuka is strewn with rocks which are home to snakes. The soil is also renowned both for its unparalleled tea and its mysterious history.

This Grand Cru is known as "Honyama Cha", or Honyama Tea. Honyama Cha is the name given to all the crops harvested along the Abekawa and Warashinagawa rivers. Honyama is famous for its rich soil and the perennial fog that envelops its plantations and results in ideal tea plant growth.
The Gyokuro is a “shaded tea” : 3 weeks before harvesting, the tea bushes are deprived of light to promote the development of umami flavor and a smooth texture. The name of this tea means "pearls of dew" in honour of its delicacy.
To unfold the full aromatic complexity of this tea, favor multiple infusions with a Kyusu or a Shiboridashi. It is also possible to make cold brew tea by replacing the water with ice cubes. The infusion is finished when the ice cubes have completely melted, and you will obtain a concentrated, intense liqueur that is as rare as jade dew.
