The story behind Earl Grey tea
Earl Grey tea has been a great English classic since a Chinese mandarin presented Charles Grey, the Earl of Fallodon and Foreign Secretary of the United Kingdom in the mid-19th century, with an old recipe for bergamot-flavoured tea.

Take 6 g of tea leaves for 30 cl of water and heat to 95°C. Leave to infuse for 4 minutes.

Blue of London is the epitome of a balanced, subtle tea which has earned its place in the kitchen. It can also be used as part of a congruent pairing with citrus: to bring out the flavours in an orange sauce, for example, or even to pair with a lemon tart for dessert.
